Description

Carmine is a natural red pigment produced from the dried bodies of female cochineal insects. It is a complex mixture of organic compounds, with carminic acid being the primary component. Carmine is produced by extracting the insect bodies with boiling water, followed by filtration and drying. The resulting powder is then mixed with aluminum salts to form the pigment. Carmine is widely used as a food coloring, particularly in red-colored beverages, candies, and baked goods. It is also used in cosmetics, pharmaceuticals, and textiles. Carmine is considered a safe food additive by most regulatory agencies. However, some people may experience allergic reactions to carmine, and it is not suitable for vegans or vegetarians.'

carminic acid : A tetrahydroxyanthraquinone that is that is 1,3,4,6-tetrahydroxy-9,10-anthraquinone substituted by a methyl group at position 8, a carboxy group at position 7 and a 1,5-anhydro-D-glucitol moiety at position 2 via a C-glycosidic linkage. It is a natural dye isolated from several insects such as Dactylopius coccus. [Chemical Entities of Biological Interest (ChEBI), Hastings J, Owen G, Dekker A, Ennis M, Kale N, Muthukrishnan V, Turner S, Swainston N, Mendes P, Steinbeck C. (2016). Carmine: Coloring matter from the insect Coccus cacti L. It is used in foods, pharmaceuticals, toiletries, etc., as a dye, and also has use as a microscopic stain and biological marker. [Medical Subject Headings (MeSH), National Library of Medicine, extracted Dec-2023]
