Description

Diethyl malate is an ester of malic acid. It is a colorless liquid with a fruity odor. It is used as a flavoring agent in foods and beverages. It is also used as a solvent in the production of pharmaceuticals and other chemicals. Diethyl malate is synthesized by the reaction of malic acid with ethanol. It is an important compound because it is a key intermediate in the biosynthesis of many important natural products, including the amino acid L-aspartate. It is studied for its potential use as a biofuel. It is also being studied for its potential use in the treatment of cancer. The compound has been shown to have anti-inflammatory properties and to inhibit the growth of cancer cells in vitro. It is thought to act by inhibiting the activity of the enzyme cyclooxygenase-2.'
