Description

Alliin is a sulfur-containing amino acid found in garlic. It is an odorless compound, but upon enzymatic breakdown by alliinase, it is converted into allicin, which is responsible for garlic's characteristic pungent odor and many of its health benefits. Alliin is synthesized in garlic bulbs through a series of enzymatic reactions involving cysteine and pyruvate. It is believed to play a role in garlic's antimicrobial, antifungal, and antioxidant properties. Researchers are interested in alliin and its breakdown product allicin due to their potential therapeutic applications, including the treatment of cardiovascular disease, cancer, and infections. Alliin is also studied for its potential benefits in reducing inflammation and improving immune function.'
